Passover is celebrated in the spring, usually in April, for eight days. During this time, Jews abstain from eating leavened bread and any foods or drinks containing leavened grains, which symbolise the hurried departure of the Israelites from Egypt when they did not have time to let their bread rise. Instead, they eat matza, or unleavened bread, which represents the haste with which the Israelites left Egypt.
